European Union - European Project survey CoolMeat

We would like to briefly inform you about a R&D project that we are currently involved in called COOL-MEAT, which is being funded under the Seventh Framework Programme of the European Commission. The COOL-MEAT Consortium comprises Small and Medium Enterprises (SMEs) and Research and Technology Developers (RTDs) from across Europe.

 

 

The COOL-MEAT project aims to develop a combined cook-cool technique, known as immersion vacuum cooling, for rapid cooling of water-cooked meat joints. In terms of its use within the cooked meat industry, the technique will reduce the cooling times (up to 40%) and the energy consumption considerably, while keeping the quality of the cooked products.

 

 

In order to ensure that the needs of the cooked meat industry are adequately researched and taken into account during the development work of this project, we would be most grateful if you could take a few minutes of your time to fill out a simple on-line questionnaire, which you can easily access by clicking on:

A European funded project to develop a new way of cooling meat is looking for input from the industry.

The cool meat project is developing a meat cooling system based on the technique known as immersion vacuum cooling (IVC).  The 2 year €1.2 million project is being funded by the European Commission’s Seventh Framework Programme (FP7) and has the backing of 5 companies, ranging from cooked meat producers to equipment manufacturers, from across Europe.  The scheme is also using existing IVC research conducted by University College Dublin.

The aim of the Coolmeat project is to develop a technologically advanced, cheaper and greener way of rapidly cooling cooked meats that will meet the needs of thousands of cold meat producers in Europe.  Combining rapid processing times with lower mass losses will enable producers to obtain an overall high quality product in terms of safety, sensory and physical characteristics.

The project’s leaders have launched a questionnaire – at http://tinyurl.com/6ht7kz7 – to try to ascertain the sector’s cooling needs.

Lee Gapper of the Food machinery Company, one of the groups engaged in the Coolmeat project, said; “We need as many cooked meat producers as possible to answer our online questionnaire, so that we are sure we are designing the most suitable and versatile unit possible.  All responses will be treated confidentially and will be used solely for this project”

The COOLMEAT Project.
Rapidly cooling cooked meats without compromising quality.
The project aims to produce a system that can cool meat safely and rapidly without compromising the meat’s flavour and texture.
For meat producers, cooling the meat once it is cooked poses a real challenge: conventional methods for cooling meat are very time consuming and do not easily enable producers to meet with “cook-cool” guidelines to minimise the growth of any pathogens that may have survived the cooking process.  In light of this, the meat industry continuously seeks rapid cooling methods.

The COOLMEAT project comprises of five SMEs from cooked meat producers and Equipment manufacturers from within Europe who have teamed up with three research providers in order to work together on a two-year 1.2 million Euro project funded by the European Commission’s Seventh Framework Programme (FP7) to develop a meat cooling system based on a novel technique known as immersion vacuum cooling (IVC). The project is built upon existing research into IVC conducted by University College Dublin.

The Food Machinery Company has been appointed the UK and European representative for the Taiwanese JENG YUH range of Vacuum Cooling equipment.

The first system has just been installed at TAIKO Foods in London, a leading manufacturer of Sushi.

The chilling times are fantastically fast for example 50 Kg of rice can be cooled from 95 degrees Centigrade to 20 degrees Centigrade in just over FOUR Minutes !

Vacuum Cooling as a process is not new, but the level of investment has stopped many producers from even considering the process, despite the significant improvements in product quality, microbial counts and cooling costs.

However, the unique design of the Jeng Yuh range offers vacuum coolers at prices close to that of conventional blast chillers.

The Jeng Yuh coolers offer two distinct styles of cooler, the traditional "kettle" style of cooler and a unique shelf / trolley loading version with capacities from 60 kg up to 400Kg per batch.

The process is suitable for virtually all food products from Ready meals, Potatoes, sauces, Roast Meats, Desserts etc
